2010

The beginning

At 22, inspired by the aromas of childhood and the hands of Grandma Teresa and Mama Rosa, a decision was made: not to open a pasta factory, but to safeguard a heritage and bring back the emotion of traditional pasta to our tables.

Research

Every morning, fresh pasta made properly, to the point of becoming a benchmark for the town and for restaurants. From a question — "how to make the best possible pasta?" — came the study of wheat, semolina, and bronze die extrusion.

2017

The challenge of dry pasta

Giving dry pasta the soul of fresh pasta: a year of testing and research. We choose slow drying at low temperatures—we don't dictate the drying time to the pasta, it dictates it to us—and certify it with furosine.

Earth and bronze

A zero-mile supply chain with a friendly farmer: naturally grown wheat, respecting the seasons. Each shape bronze-drawn, for a rough surface that holds every sauce. We remain an artisanal laboratory: less quantity, more quality.

Today

From the first order for Amsterdam, we have expanded to the Netherlands, Germany, France, China, and beyond, and in 2024, to new elegant and sustainable packaging. We enter the laboratory with the same enthusiasm as on the first day, because our goal is not to produce pasta, but to deliver an emotion.
